A/C Eliminator Kit

I would suggest the UPR eliminator pulley. It's a nice piece and IMO looks way better than the ford racing kit that moves the Power steering pump up.
It would also keep it simple for you since your running a manual rack. If you wanted to pull it completely out you would have to run I believe a ribbed water pump pulley and change the tensioner.

I ordered the UPR eliminator pulley. It looks great, but you will have to run a 1/2" shorter belt than with the compressor. Here it is:
Correction i forgot to mention, it's a 1" shorter belt, not 1/2"
