Interior restore

I have an 89 hatch 5.0 GT. It has been garage kept but sitting for 15+ years :( I'm finally getting back to it and hoping to have my 3 boys help restore it. It won't be an actual restoration as it is far from stock. I just want to get it back to having a good, clean looking interior.

I'm looking for input on how best to restore/clean the interior. I have most of the interior out of the car.

I'm looking for product recommendations on cleaning the panels, carpet and seats.
