When electronic fuel injection came out in the 86 models (5.0), they used "speed density" which relied on vacuum to determine air/ fuel mix. It worked well, but wasn't able to handle much in performance upgrades. In 89, Ford switched to "mass air flow" which used an air sensor mounted in the intake pipe (88 for California models) . The maf system is better at adapting to upgrades (heads, cam, intake, bigger injectors, etc.). A maf conversion is common for pretty much any major performance mods.
